Egusi Soup is a soup made of Egusi, protein-rich seeds of certain cucurbitaceous plants, which after being dried and ground are used as a major ingredient in West African cuisine. Egusi is basically white pumpkin seeds though some people prefer to call it melon seeds.
It is made of Ground egusi (or pumpkin seeds). Other ingredients include red palm oil, African crayfish, meats and fish, seasoning, hot pepper and some form of leafy greens.
Egusi seed is a good source of potassium and calcium, minerals that regulate blood pressure. It is also a rich source of magnesium, phosphorus, iron and zinc. And just like all plant foods, egusi is naturally cholesterol-free.
